How a loaf is made

Two days in the life of one loaf

From sack to shelf our bread takes 48 hours. Keep scrolling and follow the dough through the night.

  1. Day 1 · 07:00

    Mill and mix

Wheat and rye go through our stone mill in the morning. The flour is still cool when it meets the levain that gave the bakery its name.

  2. Day 1 · 17:00

    Shape by hand

Each loaf is folded on the bench, one at a time, and tucked into a linen-lined basket for the night.

  3. The long rest · 36 hours

    Sleep in the cold

The baskets wait in the cool room for a day and a half. That slow rest builds the gentle sour taste and the open, glossy crumb.

  4. Day 3 · 05:30

    Score the crust

One quick blade cut lets the loaf open in the heat. Each baker signs their bread with a pattern of their own.

  5. Day 3 · 06:30

    Bake in the wood oven

The fire is lit before dawn. The first bread is out as Fox Point wakes up, the next trays follow at 10:30 and 12:30.

Step inside

One oven, two bakers, a room on Wickenden Street

Marta and Tomás opened Levain in 2014 because they missed bread that tasted of the grain it came from. Twelve years later they still mill the flour, fire the oven and run the counter themselves.

Questions we hear at the counter

Which bake should I come for?

06:30 has the widest choice of bread. 10:30 brings warm natas and croissants. 12:30 is the last batch of baguettes, and by early afternoon the shelves run thin.

Can I pay by card?

Yes. Cards and contactless work for any amount, and cash is fine too.

Is there anywhere to sit?

There's one long shared table and a few stools at the window bar. Most people take their bread to go, so a seat usually frees up quickly.

Do you make anything gluten-free?

No. Flour is in the air of a working bakery, so we can't promise any item is free of gluten. Every product lists its main allergens on the menu above.

Will you hold bread for me if I'm running late?

Reserve before 09:00 and your loaf waits behind the counter until we close that day.
